What is TalbiChoco?

Talbina is a barley flour porridge cooked in milk or water, whose name comes from the Arabic laban, milk, because of its white colour and consistency once prepared. It is one of the oldest preparations of the Arab-Muslim world, present in the corpus of prophetic medicine.

TalbiChoco is its chocolate version. The base remains the same barley flour, here hulled and from France, to which dark chocolate chips and cocoa are added. The result: a talbina that keeps its character but gains a cocoa roundness, particularly popular with children.

Three ingredients, all organic

Hulled barley flour makes up 70% of the blend. Hulled barley is a grain whose inedible outer husk has been removed while keeping the bran and germ, giving it a more rustic flavour than pearl barley. Here it comes from France.

The dark chocolate chips (20%) are made of cane sugar, cocoa mass and cocoa butter. They melt during cooking and spread through the porridge. Finally, 10% cane sugar and alkalised cocoa powder bring the brown colour and the underlying chocolate note. All these ingredients come from organic farming.

How to prepare TalbiChoco

The base

Mix one to two tablespoons of TalbiChoco into a bowl of cold milk or water, stirring well to avoid lumps. Adjust to the consistency you want.

The cooking

Bring to a low heat and cook for a few minutes, stirring constantly, until it thickens. The chips melt gradually and colour the porridge.

The sweetening

TalbiChoco is already lightly sweetened by the cane sugar and chips. Taste before adding honey; many prefer it as it is.

The variations

A pinch of cinnamon, a few crushed almonds, a sliced banana or a spoonful of honey for the sweet-toothed. Serve hot, at breakfast or as a snack.

Choosing your size
