What is spirulina?

It is often presented as an algae, but spirulina is in fact a cyanobacterium: a microscopic photosynthetic micro-organism, green tending towards blue. Its scientific name is Arthrospira platensis, by far the most cultivated and consumed species.

Its colour comes from its pigments: chlorophyll, green, and phycocyanin, blue, which gives spirulina its very particular shade. It is grown in warm, alkaline freshwater ponds under strong sunlight.

A food that goes back to the Aztecs

Spirulina is nothing new. The Aztecs already harvested it from Lake Texcoco, gathering it with nets before drying it and adding it to their preparations. Comparable uses are found around Lake Chad in Central Africa.
