What is ginger?
Ginger is a herbaceous plant of the Zingiberaceae family, the same as turmeric and cardamom. It is an Asian plant, grown mainly in India and China, and it is the rhizome that is harvested: a thick, knotted underground stem, often mistaken for a root.
The rhizome is eaten fresh when harvested young, or dried and ground to a powder when left longer in the ground. It is that powder, with its distinctive sharp, lemony taste, that fills our capsules. Its full botanical name is Zingiber officinale, and the dried spice is sometimes sold as white spice.

Ginger has been part of Asian cooking for thousands of years. It turns up in Indian curries, Chinese broths, Japanese marinades and, closer to home, in gingerbread and end-of-year biscuits. Trade routes brought it to the Mediterranean well before long pepper or nutmeg.
