Maca is a herbaceous plant of the cruciferous family, the same as radish, turnip or cabbage. Its root is eaten, a fleshy tuber resembling a small turnip, cream, yellow, red or black in colour depending on the variety.

It grows in conditions few cultivated plants tolerate: the high plateaux of the Peruvian Andes, between 3,500 and 4,500 metres, with intense cold, constant wind, poor soil and fierce sunlight. It is one of the highest-altitude food crops in the world, and the Junín region is its historic heartland.

An Andean root for centuries

Maca has been grown on the altiplano for centuries and is part of the traditional Andean diet. There it is eaten dried then cooked: as porridge, in a hot drink, in baked preparations, or fermented. Colonial-era chroniclers already mention it as a crop of these highlands.
