Geographical and natural origin of sidr malaki honey

When it comes to sidr malaki honey from Yemen, a little extra information is not an unnecessary luxury.

Originating in the Daw'an region (Hadramawt to be precise), this region is world-renowned for the quality of its honeys.

The region has a key advantage: it is rich in jujube trees, the fruit trees from which the bees gather to produce this exceptional delicacy.

The quality of local beekeeping, combined with the richness of the region, make this a must-have product, just like royal jelly.

Harvested in November, when the bees have had time to gather the flowers of the jujube tree, Yemeni beekeepers don't use any tools to obtain the precious nectar.

Directions for use

This honey has been analyzed in a French laboratory to guarantee its quality.

If you wish to use it as anenergizer, take a teaspoonful in the morning on an empty stomach, mixed with water and a citrus fruit.

Caution: Mixing honey with hot water will cause it to lose its therapeutic qualities, so lukewarm or cold water is strongly recommended.

Yemeni jujube honey can also be eaten for pleasure, ideally as part of a sandwich. Its pronounced taste is also the perfect balance to goat's cheese on toast.

Crystallization of Yemeni sidr Malaki honey

A natural phenomenon

Contrary to popular belief, the crystallization of this product of the beehive is far from being synonymous with expiry. Nor is it a sign of poor honey quality. In fact, this transformation is totally natural, and can even be a sign of quality.

Depending on where the honey comes from, but also on its composition, its texture can change. Generally speaking, all honeys crystallize, with a few exceptions..

What about our Yemeni sidr malaki honey?

Rumor has it that this nectar never crystallizes. However, we'd like to qualify this statement. If your precious honey of the world were to change its appearance, it would be a shame to claim that it's a scam, or even that it's out of date!

The crystallization of Yemeni sidr Malaki honey depends essentially on its humidity level. Ideally, this should be less than 20%, to guarantee proper preservation. This is the case with our precious nectar, which has a moisture content of 15%. As a result, it preserves its texture over time.

Nevertheless, Yemeni jujube honey naturally has a highly supersaturated sugar composition. It is therefore normally destined to crystallize. It's all a question of humidity. If it is between 17% and 20%, sidr honey will inevitably crystallize.

This is not a synonym for poor quality or adulterated honey, but simply a question of chemistry!

Finally, you should know that nectar that has crystallized loses none of its organoleptic properties or health benefits. Its taste is therefore not altered, and it can be consumed without any problem. Crystallization is even reversible. In fact, if you wish to return your nectar to its original, more liquid texture, simply place it in a bain-marie.
