Recipe for making honey baba in a jiffy
If you've already tried honey baba once, you've probably adopted it. How about learning how to make it in just a few minutes? Here's the recipe.
The ingredients
To make honey baba, gather the necessary ingredients. To make savarin dough, you'll need :
- flour ;
- fresh yeast ;
- eggs ;
- melted butter ;
- salt and
- honey.
You'll need to make the syrup. To do this, mix honey, orange zest, yellow and lime zest, vanilla sugar and brown sugar. For a tasty baba, make a cream with mascarpone, powdered sugar, scraped vanilla and whole cream.

Preparation
Start by adding the crumbled yeast, flour, honey, salt and eggs to the bowl of a food processor. Knead for 10 minutes. Then add melted butter and knead for a further ten minutes to smooth the dough. Pour the dough into a bowl and leave to rise for 40 minutes. Next, grease the baking tin and preheat the oven, then insert the tin containing the dough pieces. About 30 minutes should be enough for your baba.
Place all the syrup ingredients in a saucepan and bring to the boil for about 20 minutes. For a smooth honey baba, you can choose jujube honey, much sought-after for its quality. To make the whipped cream that will accompany your pastry, whip the mascarpone with the liquid cream. Add the powdered sugar shortly before you finish whipping the cream. Set aside in a cool, fluted piping bag. All that's left to do is arrange your dish before enjoying it, either on its own or with friends and family.
