The Tamina recipe
Have you ever heard of the Tamina recipe? Every household in eastern Algeria is familiar with this delicious traditional sweet dish. It's eaten on special occasions. Whether to celebrate the birth of a newborn, a circumcision or even Ramadan. Tamina is a dessert typical of the Constantine region. Served and decorated in the middle of a plate, it's very similar to Maghrebian cakes, which are eaten with a spoon. After all, that's to be expected.
This delicious dish is made from :
- Semolina
- Honey
- Butter.
These three ingredients form the basic triptych of the Tamina recipe.
The Tamina recipe in a nutshell
Tamina is a generous dessert for your host or neighbors. It's a delicious dish to be savored with passion. Indeed, from an energy point of view, it couldn't be better. So here's the protocol in detail:
- Take half a kilo of medium semolina and brown it in a frying pan
- At this stage, make sure the semolina browns and doesn't crack. This is to ensure that the Tamina recipe doesn't go wrong.
- Melt 250 grams of butter and honey in a saucepan over low heat.
- For this recipe, we recommend orange tree honey, renowned for its sweetness.
- Pour the toasted semolina into the heart of the pan, stirring with a wooden spoon.
- Continue over low heat until the mixture thickens.
- Finally, spread the mixture onto a flat plate.
Decorating this noble dessert
At this stage, you'll notice that the Tamina forms a generous, creamy paste. It should be left to rest for the aromas to dissipate wonderfully. In Algerian homes, it's customary to sprinkle the preparation with a spoonful of orange blossom. After resting, it's time for the dressing phase, where personalization and free will are the order of the day.
Tamina is usually garnished with almonds, just as Kalb El Louz is.
Some people now take care to decorate the preparation with various spices or nut shavings. Among the most recurrent practices at the heart of the recipe, we find the use of :
- Powdered cinnamon
- Crushed pistachios
- Slivered coconuts.
Several variations are available. Some cooks even mix semolina with chickpea flour in the heart of their recipe.
How to enjoy our generous dessert?
The truth is, even if Tamina is only prepared for special occasions. Algerians aren't picky eaters. They'll eat it copiously by the spoonful, accompanied by the customary 100% Arabica coffee.
It's an original way to relax and enjoy a tasty moment. Traditionally, the preparation is cut in the middle of a large dish before being divided into cups.
